Many of our white teas are organically grown and harvested from a region which has been famous for their white teas for centuries - the hillsides and mountains of Fujian Province in southeastern China. Like a true champagne is only produced in a specific region of France, the same is true of white teas, the best of which come from Fujian.
White teas are the most minimally processed of all teas. After hand-plucking of newest buds and leaf growth they are dried and withered immediately. Individual tea farms or regions have varying secretive traditions for their withering process. The timing of each step and how the withering is done determine the taste of the white tea as it creates a fresh, natural sweet and slightly floral infusion in your cup. White teas need to be brewed at lower temperatures and the same leaves can be infused multiple times.
Recently, a study has looked at the health benefits of white tea specifically. Like green tea, white tea is high in antioxidants. What the newest study found is that white teas may be an effective inhibtor to fat cell formation.
