About Black Teas
The curious case of “black” teas, perhaps nothing divides East-West taste preferences more than our western affinity for black teas. In the thousands (some say 5,000) years of tea drinking, black teas only date back a few hundred years to the Ming dynasty (1368-1644 A.D.) when new tea processing techniques were developed to be able to export teas that could survive the long journey from China to Europe and the North America.
Black teas are made from leaves of the same tea plant that also can produce green, white, oolong and other teas. The difference between the tea types is in the processing of the leaves once harvested when black teas go through withering, rolling, oxidation (sometimes called fermenting) and drying or firing. Black teas can either be hearty single estate and blended black teas that hold up well to western traditions of adding milk and sugar, or more nuanced black teas like Darjeeling and Keemun whose flavor profile is refined and are best apprec
