In the valleys of the Himalayan Mountains in India are some of the most famous tea gardens in the world - the Darjeeling tea estates. To be a Darjeeling grower the tea estate must lie inside very specific boundaries that define the Darjeeling tea growing area. Surrounding tea gardens may produce tea with similar flavor characteristics as those within the Darjeeling district but they may not be called true "Darjeeling" teas.
Our Himalayan Chai is blended with teas from foothills surrounding the the Darjeeling region and blended with a lighter profile of chai spices softened by the addition of cinnamon and vanilla. A medium bodied chai that brings a refreshing flavor without the heaviness of more traditional chai blends.
Heat water (filtered if possible) to a boil and let cool slightly before adding one tablespoon of loose tea per cup (apprx. 8 ounces). Infuse for 3–4 minutes depending on taste preference - do not oversteep. Tastes best with added milk and sweetner according to your preference.
Want to try a more traditional way of preparing your Himalayan Chai? Take 1 tablespoon of loose leaf chai blend, plus a 1/2 cup of milk, 3/4 of cup of water, and 1.5 tablespoons of sweetner and add to a small sauce pan. (For more than one serving multiply the ingredients by the number of servings). Bring the chai and liquids to a boil, reduce the heat, cover, and simmer for three to four minutes. Strain the heated chai tea into serving cups and enjoy!
